Common pheasant is the everyday game-farm and wild pheasant of Europe and North America—long-tailed, lean, and perfect for autumn roasts with bread sauce or creamy cider. Young poults are tender; mature cocks need moisture and often pot-roasting. Rest well after cooking so the lean breast stays juicy. Use carcasses for excellent game stock. The baseline bird every other pheasant variety is compared against.
