Somali ostrich (often treated as S. molybdophanes or a distinct blue-neck form) is the Horn of Africa bird with cool blue-grey neck tones and wild, athletic meat when harvested. Flavour is lean and pronounced—closer to wild game red meat than mild farm black. Availability is rare and often conservation-constrained; farmed analogues may be milder. Cook hot and fast for steaks, or stew tougher portions. Not a commodity product.
