Yellow onions are the workhorse brown-skinned storage bulbs with high pungency when raw and deep sweetness when long-cooked. Layers are white to pale gold; dry skins cure well for months. They dominate professional mirepoix, sofrito, and stock pots because flavour holds through simmering. Dice for bases, slice for French onion soup, or roast wedges until jammy. Raw use is harsh for many palates—soak slices briefly if needed. Choose heavy, firm bulbs without soft necks.
