Vidalia is a protected Georgia sweet onion grown in defined counties where low-sulfur soils help produce famously mild, juicy bulbs. Granex-type genetics plus terroir create the trademark raw sweetness. Season is spring–early summer; true Vidalias are legally name-protected in the US. Eat raw, in salads, or as thick grilled slabs; classic onion rings celebrate the mild flesh. Do not confuse generic “sweet onions” with certified Vidalia when the name is the point. Store carefully—high sugar invites rot.
