Red onions have purple-red skins and rings that look vivid raw in salads, salsas, and pickles. Pungency is moderate to strong; colour softens toward grey-pink when cooked, so chefs often reserve reds for raw or quick-pickle applications. Flesh is typically slightly milder than yellow storage types of similar size. Slice thin for burgers and Greek salad; quick-pickle in vinegar and salt for tacos. Grilling softens bite and keeps some colour. Not the first choice for long brown stocks where yellow onions caramelise more cleanly.
