Picual is Spain’s dominant oil olive—high oil content, pointed fruit shape (pico), and robust extra-virgin oils with tomato leaf, fig wood, and lasting peppery bitterness when harvested green. Jaén and Andalusian monocultures produce enormous volumes. Stability is excellent: high polyphenols help Picual oils resist oxidation better than many mild cultivars. Choose Picual when a salad or grilled meat needs assertive olive character. Early harvest oils are intensely green and bitter; later harvests mellow. Blend with milder oils if diners shy from pungency. Less famous as a whole table olive than as the backbone of Spanish bulk and quality oil.
