Picholine is the slender green French table olive—firm, almond-elongated, and classically brine-cured with a lively herbal bitterness. Languedoc and Provençal packing made it the reference French green olive in jars. Dual-purpose potential exists for oil, but export fame is as a cocktail and aperitif fruit. Serve with pastis, goat cheese, and niçoise-adjacent salads; stuff occasionally though Manzanilla dominates industrial stuffing. Texture stays pleasantly resistant to the tooth. Rinse heavily salted commercial brines and refresh in olive oil with thyme and orange peel for a Provençal accent.
