Nocellara—especially Nocellara del Belice from Sicily—is a large, bright green table olive with crisp snap, mild bitterness, and buttery flesh that shines in Castelvetrano-style mild cures. PDO Belice fruit is famous for vivid colour and gentle flavour that converts olive skeptics. Oil from Nocellara can be excellent but table use drives most international name recognition. Serve as premium antipasti with cheese and cured fish; chop for salsa verde variants; avoid over-salting which masks the buttery character. Distinct from tiny oil olives—these are meaty single-bite fruit. Look for firm, bright green specimens, not dull brown oxidised packs.
