Manzanilla is Spain’s classic small-to-medium green table olive—round “little apple” shape, firm flesh, and a clean briny bite that takes pimento, garlic, or anchovy stuffings well. Seville-area processing traditions made Spanish green Manzanilla a supermarket staple worldwide. Fruit is harvested green for lye or brine curing rather than left to full black ripeness. Martini garnish, relish trays, and chopped olive salads all default to Manzanilla-type greens. Firmness survives stuffing machinery better than soft ripe blacks. Rinse and marinate with citrus or herbs to shift the flavour beyond plain can brine.
