Kalamata is the almond-shaped Greek table olive from the Peloponnese—deep purple-black when ripe, slit or needled for brine curing, with rich fruity flesh and a wine-like finish. PDO rules and traditional processing protect the name in genuine Greek packs; similar shapes elsewhere may be labeled “Kalamata-style.” Flesh separates cleanly from the pit when well cured. The default Greek salad olive and a favourite for antipasti, pizza, and baked breads. Rinse excess brine if salt overwhelms; oil-pack versions taste softer and fruitier. Pit carefully for purees—the elongated shape yields generous flesh relative to many small oil cultivars.
