Hojiblanca—“white leaf”—is an Andalusian dual-purpose olive with silvery foliage, medium fruit, and oils that can show herbal, apple, and mild bitter notes depending on ripeness. Trees tolerate limestone soils and drought better than some finicky cultivars. Fruit also cures as green and turning-colour table olives in Spanish packing plants. Versatile oil for everyday cooking and finishing when Picual feels too aggressive and Arbequina too soft. Table Hojiblanca appears in mixed Spanish olive selections. Harvest timing swings the oil from green-herbal to softer ripe styles—read mill notes rather than assuming a single flavour.
