Together with Leccino and Moraiolo it shaped the Tuscan extra-virgin archetype. Trees are productive but can be cold-sensitive at the margins of olive climate. Seek Frantoio-forward oils for bruschetta, ribollita, and bistecca finishes that need Italian green bitterness.
