Arbequina is a small Catalan olive now planted worldwide for early-bearing high-density oil orchards—fruit yields delicate, buttery, lightly peppery oil with low bitterness when milled well. Trees stay relatively compact, suiting mechanical harvest hedges. As table fruit, Arbequina is tiny and less iconic than as oil; the oil identity dominates commerce. Use Arbequina oil for mayonnaise, mild vinaigrettes, and dishes where aggressive Picual pepper would dominate. Fresh early-harvest oils smell of grass and green almond; later harvests soften further. Store dark and cool—delicate aromatics fade faster than robust southern Spanish oils.
