Buyers know them for large size, clean rope-grown shells, and a sweeter, denser meat than many small European blues. The name sells origin as much as species—cold, productive NZ waters and regulated farms. Ideal for BBQ half-shell with garlic crumbs, Thai-style pots, or simple wine steam when sold live. Frozen half-shells should be glossy and free of heavy ice glaze. Heat until the meat firms and shells are hot; serve immediately.
