Green-lipped Mussel

Green-lipped mussel (Perna canaliculus) is the large New Zealand mussel recognised by a vivid green edge to the shell and generous orange or cream meats. Flavour is sweet and full, with a meaty bite that stands up to grilling and Asian-style steaming with ginger and chilli. Size often exceeds common blue mussels, so a fewer shells fill a pot. Steam open, then finish under a grill with herb butter, or cook in coconut broth and lemongrass. Half-shell frozen products are common exports; cook from frozen or thawed until hot and just firm. The green lip remains after cooking as a visual signature. Do not over-steam or the large meats turn chewy.
