Makaira nigricans is Atlantic blue marlin—one of the great billfishes, with dense, meaty flesh that is milder than tuna when very fresh but can be dry if overcooked. Sport fishing dominates capture; commercial sale is restricted or controversial in some regions. Colour runs pink to beige with a firm steak texture. When legally available, grill thick steaks carefully to medium, basting often. Marlin is leaner than swordfish for many palates—oil or marinade helps. Prefer smoked or cured preparations if the fish has been frozen hard for travel.
