Black marlin (Istiompax indica) is an Indo-Pacific giant billfish with dense, pale meat historically eaten in parts of Australia and Asia. Texture is firm and dry-leaning; careful basting or smoking improves the plate. Sport culture is intense; commercial food use is limited and region-specific. When available legally, cut steaks, marinate with oil and acid, and grill briefly. Black marlin also smokes well for later flaking. Do not treat it as everyday whitefish—think occasional meaty billfish with a light hand on heat.
