Kesar is a Gujarati dessert mango prized for deep orange, almost saffron-tinted pulp, intense sweetness, and a compact oval shape with a small stone. Skin stays greenish-yellow with a light blush; the name nods to saffron (kesar) colour in the flesh rather than spice content. Fibre is low; aroma is rich and lingering without the full Alphonso perfume package. Spooned fresh, packed as pulp, and used in Gujarati sweets and aamras-style purees. Slightly more affordable than top Alphonso packs in many seasons while still clearly premium. Frozen Kesar pulp is common in Indian grocery freezers year-round.
