Ataulfo (often sold as honey or champagne mango) is a small, flattened Mexican cultivar with golden wrinkled skin when ripe and exceptionally creamy, fibre-free yellow flesh. Flavour is pure honeyed tropical sweetness with low acid and almost no turpentine edge. Fruit ripens to a deep gold and yields generously relative to its petite size. Ideal for clean slicing, baby purees, ceviche-style salsas, and desserts where silk texture matters more than large showy cheeks. Softens quickly past peak—use within a day or two of full gold colour. Dominates North American specialty mango displays in spring alongside larger red-skin types.
