Alphonso is India’s most celebrated dessert mango—compact oval fruit with thin skin that blushes saffron-gold, virtually non-fibrous saffron flesh, and a perfume of cardamom, honey, and soft resin. Pulp is dense enough to spoon like custard yet melts without stringiness. Peak fruit from coastal Maharashtra (notably Ratnagiri and Devgad belts) commands export premiums and fierce loyalty. Eat plain, fold into aamras, or finish kulfi and soft cakes; heat dulls the volatile top notes, so minimal cooking is best. Season is short and tightly watched; frozen pulp extends restaurant use without matching tree-ripe aroma. Avoid confusing pale immature imports with true Alphonso maturity.
