Scomber scombrus is the Atlantic mackerel proper—a tiger-striped, torpedo-shaped scombrid of the North Atlantic with rich, dark-pink flesh and exceptional omega-3 oil. When day-fresh the flavour is clean, meaty, and almost beefy under the char of a grill; a day late it turns metallic and soft at the belly. The skin crisps dramatically; the pin bones are manageable once you know the line. Grill or broil hard with acid on the side—mustard, tomato, gooseberry, or vinegar—to cut the oil. Smoke and cure are traditional northern European paths; Japanese kitchens use related techniques for similar scombrids. Peak autumn and winter fat makes the best eating. Never buy soft-bellied fish with dull eyes: the oil that makes scombrus great also makes it perishable.
