Atlantic mackerel is the market label for Scomber scombrus sold across Europe and eastern North America—the everyday oily fish of fishmonger slabs, not the larger Spanish or king mackerels of warmer seas. Fillets are thin-to-medium, dark along the bloodline, and self-basting under heat. Flavour is assertive and savoury when quality is high; it rewards bold partners and suffers under timid treatment that leaves oil tasting flat. Butterfly for the grill, cure for Scandinavian-style lunch plates, or hot-smoke for pâté and salads. Remove the dark bloodline if guests are sensitive to stronger notes. Frozen-at-sea quality can be excellent; thawed soft blocks are not. Seasonal fat peaks improve mouthfeel—lean spring fish can taste thinner and benefit from smoking or sauce.
