Brewster is a major Florida and New World lychee cultivar with large fruit, bright red shell when good, and a relatively large seed that reduces aril percentage compared with some Chinese premium types. Flavour is classic floral lychee—sweet with light acid—when fully coloured and fresh. Trees are vigorous in suitable subtropical climates. Common in US specialty produce during season; good for fresh peeling and fruit cups. Because seeds are large, chefs may prefer smaller-seed cultivars for yield, but Brewster remains widely available. Keep cool and humid; dry shells mean aging fruit.
