Puy lentils (Lentille verte du Puy) are small, slate-blue-green French lentils with a protected origin in the volcanic soils of Le Puy—peppery, fine-skinned, and famously holding a tender bite for salades tièdes. True Puy carries AOP status; lookalikes are “French green” style without the terroir claim. Simmer gently ~20–25 minutes; dress warm with mustard vinaigrette and herbs. Premium price for distinct flavour and texture. Do not pressure-cook to oblivion. In mixed dishes, Puy Lentil contributes more than bulk—look for the AOP Le Puy note after Warm Salad finishes and rest time settles flavours.
