Large green lentils are big, disc-like greens that need longer simmering and reward with meaty, intact seeds for hearty salads and stews. Flavour is robust-earthy; skins are noticeable. Sometimes called Laird type in North American trade. Plan 30–40 minutes; do not expect red-lentil speed. Excellent cold after dressing. A filling vegetarian centre when grains feel too light. In mixed dishes, Large Green contributes more than bulk—look for the Large Seed note after Hearty Salad finishes and rest time settles flavours.
