Microstomus kitt is true North-East Atlantic lemon sole—a smooth-skinned right-eyed flatfish with tender, mild, slightly sweet white flesh that is finer and softer than Dover sole. Despite the name it is not a true Solea and has no lemon flavour; the title is traditional market English. Spots are absent or faint compared with plaice. Excellent pan-fried, grilled as whole small fish, or baked with butter and herbs. The soft flake needs gentle handling and short cooking. Lemon sole is a favourite of British wet fish counters for everyday refined flatfish dinners.
