Rishiri kombu grows in the cold seas around Rishiri Island off northern Hokkaido—harder, firmer blades yielding exceptionally clear, fragrant dashi favoured in Kyoto cuisine. Flavour is clean and noble rather than thickly sticky-sweet. Chefs pay premiums for authentic Rishiri lots. Ideal for delicate clear soups and high-end kaiseki stocks. Do not overboil. The kelp’s firmness also suits kobumaki rolls after dashi duty.
