Ma-kombu is a thick, wide, high-grade Saccharina japonica from southern Hokkaido waters—prized for clear, elegant dashi with refined sweetness and strong umami without muddiness. Blades are broad and substantial; dried colour is deep olive-brown. It is among the top traditional culinary kombu ranks. Use for ichiban dashi where clarity and polish matter. Price reflects quality. A short soak and gentle heat extract the best; save the blade for secondary simmered dishes (kobumaki, tsukudani).
