Light horse meat comes from riding, racing, and lighter farm types rather than heavy drafts—often leaner frames with finer muscle grain. Cull riding horses entering inspected meat chains (where legal) form much of this category. Quality varies hugely with age and athletic history; young light horses can yield excellent steaks, while aged athletes need processing. Flavour is the classic sweet iron of cheval when properly bled and cooled.
