Fresh Tombul should smell clean and nutty; oxidised bags fail regardless of the famous Black Sea name. Roast only to pale gold, rub skins for fine paste, and freeze surplus. Use in gianduja- style work, praline, cakes, and premium snacks. Major tree-nut allergen handling applies. Compared with bulk commodity mixes, named Tombul aims at higher kernel quality for export grades. Ask for harvest year—stale Tombul is still stale.
