Jefferson is a modern Oregon hazelnut cultivar bred for commercial Pacific Northwest orchards with improved disease resistance and solid kernel quality for packing. Roasted meats deliver classic sweet, aromatic hazelnut flavour for baking, snacks, and confectionery when the lot is fresh. The breeding advances do not excuse warm storage— rancid Jefferson still tastes of paint. Pale roast, rub skins for fine paste, freeze surplus. Major tree-nut allergen handling applies. Compared with older Barcelona plantings, Jefferson is part of the replacement generation reshaping Oregon acreage. Use wholes for garnish when grade allows and pieces for doughs. Sample before large production batches.
