Goat liver is soft, dark, and iron-forward—stronger than the mild muscle cuts and excellent flash-seared or blended into pâté. Thin slices need only a hot pan; thick pieces risk a grey, dry centre before the surface browns. Pair with onions, chilli, and acid. Keep cold until cooking. Overcooking is the main failure mode—pull at just-done while still silken inside.
