Hardneck garlic (Ophioscorodon group) forms a stiff central stalk and usually fewer, larger cloves in a single whorl, with complex flavour many chefs prefer to commodity softnecks. Plants produce edible scapes in early summer. Storage is shorter than the best silverskins, but raw and roasted character is often richer. Use when garlic is a featured flavour—aioli, bagna cauda, roast heads. Save scapes for pesto and stir-fries. Buy from growers in season for peak quality.
