Elephant Garlic

Elephant garlic is not true A. sativum but a bulbous leek relative (Allium ampeloprasum) forming huge mild cloves that look like oversized garlic. Flavour is gentle, slightly leek-garlic, without the fierce raw punch of true garlic. Heads can be enormous; clove count is low. Roast whole for a sweet spread, slice into stir-fries, or use where guests fear strong garlic. Do not substitute 1:1 by volume for true garlic if you need pungency—you will under-season. Fun market vegetable with honest mildness.
