Winter flounder (Pseudopleuronectes americanus) is a right-eyed North-West Atlantic flatfish with soft, fine white flesh and a very mild flavour. Smaller and more delicate than summer flounder, it shines in gentle pan-frying and classic New England baked preparations. Stocks have fluctuated; available fish deserve careful cooking. Dredge lightly and cook quickly in butter, or bake with crumbs. The soft structure falls apart if flipped roughly. Winter flounder is excellent for simple home fish dinners where subtlety beats density.
