Gulf flounder (Paralichthys albigutta) is a left-eyed southern US flatfish of the Gulf of Mexico and south-east Atlantic, with mild white flesh and a pleasant medium flake. Smaller than large northern fluke on average, it is a favourite of Gulf Coast pan-frying, blackening, and stuffed flounder recipes. Season with citrus and mild spice, pan-sear or oven-bake whole smaller fish. Fresh Gulf flounder should never smell muddy. Pair with local seafood sides—okra, rice, or light remoulade—without burying the delicate meat.
