Wild-harvested eland meat comes from free-ranging or extensive conservancy animals taken under license—less common than ranch slaughter but still part of southern and eastern African utilisation. Condition and age vary more than on ranches. Young wild eland remain mild and excellent; older bulls need slower cooking. Field care under heat is critical. Flavour may read slightly more browse-herbal than feed-managed ranch stock.
