Thai eggplants often mean small green or green-white striped round fruits (makhuea pro) used whole or quartered in curries—firmer, slightly bitter-green, and seedier than purple globes. They hold shape in coconut curry better than soft Japanese types. Other Thai classes include long purple, but the grocery “Thai eggplant” label usually points to the golf-ball green form. Simmer in green or red curry; do not expect silky baba ghanoush texture. Slight bitterness balances sweet coconut and fish sauce. Halve or quarter; leave stems if traditional presentation wants them.
