True Sole

True sole is trade language for Solea solea and close genuine soles as opposed to flounders, plaice, or Pacific “soles” that share the name only. Expect the same dense-yet-tender white flesh, clean sweetness, and ability to be cooked whole without falling apart. Chefs use the term when they want to stress authenticity against mislabelled cheaper flatfish. Order true sole when the dish depends on structure—meunière, grilled whole, or classic fillet service with beurre blanc. Pay for firm, bright fish with intact skin slime when fresh. Overcooking dries the edges; pull when the flesh just separates from the backbone.
