Solea solea is true Dover sole—the slim, right-eyed flatfish of the eastern Atlantic and Mediterranean that defines classic European sole cookery. Flesh is firm yet delicate, with a fine flake and a distinct sweet, almost nutty flavour that holds shape after careful filleting or whole meunière preparation. Wild Channel and North Sea fish set the benchmark. Traditional service is whole on the bone, finished tableside, or as paired fillets in butter sauces. The skin browns beautifully when dried and floured; flesh should pearl and lift cleanly from the bone. Do not confuse with cheaper flatfish sold under “sole” labels—true Solea solea rewards gentle heat and simple seasoning.
