Long rough dab (Hippoglossoides platessoides in European usage, also American plaice) is a colder-water, rougher-scaled relative sometimes sold in dab and plaice mixes. Flesh is lean, mild, and soft, with less cachet than smooth common dab but still useful as white flatfish when handled well. Best crumbed and fried or used in pies and fishcakes where structure is less critical. Trim carefully—rough skin and thin fillets need patience. Do not expect Dover-sole firmness; keep methods moist and brief.
