Limanda limanda is the common European dab—a small sandy-brown right-eyed flatfish of the North Sea and nearby shelves. Flesh is soft, mild, and slightly sweet, best when very fresh and cooked simply. It has long been an affordable day-boat flatfish for northern European tables rather than a luxury species. Pan-fry whole or as fillets, bake with crumbs, or fry lightly in batter. Dabs cook in minutes; overcooking turns them dry and mealy. Look for bright skin and a clean sea smell at market.
