Cherax destructor
A tier
Cherax destructor, the common yabby of inland Australia, is a hardy freshwater crayfish with blue-grey to brown shells and sweet, lobster-like tail meat. Yabbies tolerate warm farm dams and are a staple of Australian bush and pub cookery—boiled, barbecued, or turned into creamy sauces. Blue-claw colour variants appear in clear water. Kill humanely per local practice, boil briefly, and serve with garlic butter or lemon myrtle. Farmed yabbies are more consistent than wild dam stock. Flavour sits between prawn and lobster, with less iodine than marine shellfish.

History
Indigenous Australians harvested yabbies from creeks and waterholes across the inland.
Settler farms and dams made yabby catching a rural pastime and table food.
Commercial yabby aquaculture supplied restaurants beyond farm-gate sales.
