King Crab
A tier
King crab usually means the giant Alaskan and Russian Paralithodes species—red, blue, and golden king crabs—sold mainly as huge pre-cooked frozen legs rather than whole live animals. The leg meat is snow-white, thick, and sweet with a firm, almost lobster-like bite that thrills when simply warmed and cracked. Spiny shells and long walking legs dominate the plate. Steam or bake frozen legs from thawed or still icy just until heated through; the meat is already cooked in most commercial packs. Serve with butter, or chill for salads and sushi-bar style cuts. Avoid boiling hard for long periods, which waters the flesh. True whole live king crab is rare outside producing regions.
