Cod centre-cut steak is a thick bone-in or boneless cross-section from the deepest part of the body—even cooking, large flake, mild white flavour. Ideal for grilling when you want steak shape rather than a fillet strip. Oil well—cod is lean—and do not overcook. A crumb crust or bacon wrap helps keep moisture if the steak is thick.
