Skrei is the Norwegian name for mature Atlantic cod that migrate to the Lofoten and related coastal waters each winter to spawn—leaner, firmer, and more celebrated than ordinary coastal cod of the same species. Season is short; true skrei is a provenance and season claim with quality standards attached in Norwegian marketing. Serve simply: roast or pan-cook the loin, often with liver and roe in traditional plates. Texture is notably firm and clean. Outside season, “skrei” on a menu should be questioned. Cook just to opaque; the lean muscle dries if pushed.
