Norwegian cod covers Atlantic cod from Norwegian coastal and Barents Sea fisheries, including famous winter skrei runs sold under separate premium labels. Flesh is white, large-flaked, and mild, with excellent reputation for freshness when line-caught and bled properly. Much is exported as fresh and frozen loins. Roast thick portions, pan-fry with brown butter, or serve as classic Scandinavian fish dinners. Skrei-season fish can be especially firm and sweet. As with all lean cod, stop at opaque flake—do not hold on a steam table.
