Gadus morhua is Atlantic cod, the classic white flaky fish of the North Atlantic that built fisheries from Newfoundland to the North Sea and Norway. Flesh is lean, large-flaked, and mild, turning opaque and firm when just cooked. Salt cod traditions and fresh fillet cookery both start from this species. Pan-fry, bake, roast, or salt and dry. The large flake is the pleasure—stop cooking as soon as the centre turns opaque. Cheeks and tongues are specialty bits. Overfishing history means certified or well-managed sources are worth seeking.
