Trinitario is the hybrid group from Criollo × Forastero crosses—born in Trinidad after Criollo losses, balancing hardiness with finer flavour potential. Many “fine flavour” Latin American origins are Trinitario-derived. The sweet spot for specialty chocolate: more complex than bulk Forastero, more productive than pure Criollo. Flavour varies widely by clone and terroir.
