Cerastoderma edule is the common European cockle—small, sweet, briny bivalves from intertidal sands, essential to laverbread breakfasts, Spanish rice dishes, and simply boiled seaside snacks. Meat is tender-chewy with a clean iodine sweetness. Purge sand, steam or boil briefly until shells open, and do not cook to rubber. Excellent with pasta, vinegar pepper, or Welsh cockles and eggs. Freshness is everything; discard non-openers.
